Slow Cooker Mashed Potatoes

In this recipe from Country Living, everyone's favorite starchy side-dish gets a makeover into a two-step, set-it-and-forget-it style cooking project, one you can largely leave to its own devices!

Ingredients

  • 4 lbs potatoes, peeled and chopped
  • 4c chicken stock
  • 1/2 tsp salt
  • 1c sour cream
  • 1/3c fresh chives
  • 1/2c warm milk
  • pepper to taste

Instructions

  1. Put potatoes, stock, and salt in a slow cooker and cook until tender (about 3 hours on high or 5 hours on low).
  2. Drain potatoes and return to slow cooker. Add sour cream and mash to desired consistency.
  3. Stir in chives, milk, salt, and pepper.

Twice Baked Sweet Potatoes

Mmm, there's something special about sweet potatoes on Thanksgiving, and this recipe from Woman's Day makes it a snap to serve amazing sweet potatoes because you can prep them up to two days beforehand and finish them up day-of in just 10 minutes!

Ingredients

  • 8 small sweet potatoes
  • 1 tbsp olive oil
  • 1/2 tsp pumpkin pie spice
  • cayenne pepper to taste
  • salt
  • optional: 2 large eggs & 1/2c granulated sugar for meringue OR 1 bag mini marshmallows for topping

Instructions

  1. Preheat oven to 375°F.
  2. Rub sweet potatoes with oil & pierce several times with fork.
  3. Roast until tender (around 45 minutes) and allow to cool.
  4. Cut the top off of each potato (lengthwise), scoop out the inside, and transfer the soft potato to a bowl.
  5. Place the empty skins onto a baking sheet.
  6. Mix potatoes and spices, then scoop the mixture into each skin.
  7. At this point, you can cover and store these in the fridge for up to 2 days!
  8. When you're ready to serve, warm the potatoes in the microwave (2 minutes) or in the oven (10 minutes), then top with marshmallows or meringue and broil for 1-2 minutes or until topping is brown.

  • 4c self-rising flour (leveled)
  • 2/3c tender herbs (parsley, dill, chives, etc)
  • 1 large egg, lightly beaten
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 400°F.
  2. Butter 2 muffin pans.
  3. Combine yeast, sugar, water, and let stand until foamy (about 5 minutes).
  4. Stir in remaining ingredients.
  5. Pour batter into muffin pans & bake until golden (20-25 minutes).

Ingredients

  • 2 lbs green beans, ends removed
  • 1/2c heavy cream
  • 2 garlic cloves
  • 1c mozzarella cheese
  • 2/3c freshly grated Parmesan
  • salt
  • red pepper flakes
  • lemon zest

Instructions

  1. Preheat oven to 400°F.
  2. Put green beans in a shallow dish.
  3. Pour cream over beans and scatter garlic and lemon zest.
  4. Season with salt and red pepper flakes.
  5. Sprinkle with mozzarella and Parmesan.
  6. Bake until beans are tender and cheese is melted.

Sauteed Mushrooms
